  • Red Wine - Ingredients - COOKMAISON700 ml Red wine
  • Onions - Ingredient - Cookmaison2 Onion (yellow)

  • Garlic cloves - Ingredients - COOKMAISON1 Garlic clove
  • Plain Flour - Ingredient - Cookmaison2 tbsp Flour (plain)

Instructions
 

  • Dice the onions and crush the garlic.
  • In a pot, brown the meat and pancetta in oil or butter.
  • Slice the mushrooms and the carrots.
  • Add the onions, mushrooms and carrots. Then sprinkle with flour. Mix and let it brown for a moment.
  • Pour in the red wine until it covers the meat.
  • Add the garlic, bouquet garni, salt and pepper. Then cover.
  • Cook gently for an hour.

I’ll be honest, this recipe ruined takeaway beef bourguignon for me. Once you taste the real thing, the UK restaurant version just tastes like brown gravy with commitment issues. The real pro move? Use a cheap, robust red for the pot and save the good bottle for the table. The long simmer does all the work, and drinking the nice wine you didn’t cook with is the chef’s reward.

    I made this recipe using rump steak as recommended and with Pinot Noir for the wine. It was straightforward to make and utterly delicious, the herbs gave the sauce a lovely punch of flavour and I will look forward to making it again 🙂
