Cucumber Tagliatelle & Salmon Salad

Ingredients
200 g Salmon (smoked)
2 Cucumbers
4 tbsp Creme fraiche
2 tsp Mustard (wholegrain)
Lemon juice
Chives
Capers optional
Salt
Black pepper
Instructions
- Using a vegetable peeler, peel the cucumbers lengthwise to create tagliatelles.
- Cut the smoked salmon into thin strips.
- In a small bowl, mix the mustard, chives, salt, pepper, and lemon juice with the crme frache.
- In a salad bowl, combine the cucumber tagliatelle, the salmon, and the crme frache dressing.
- Chill in the refrigerator for one hour. Add capers before serving if desired.

Another of my favourites for the summer. Super easy to make, yet looks great and very tasty!!













This is one of my absolute favourite salads. Such a crowd-pleaser and incredibly easy to make. It’s fresh, elegant, and always feels a little special despite how simple it is. I make a couple added steps: after slicing the cucumber, I very lightly salt it and add ½ teaspoon of white wine vinegar, then leave it to rest around 10min in a colander. A final gentle pat before adding it to the salad removes excess water and keeps everything beautifully crisp and well balanced. I also add 1 teaspoon of olive oil to the dressing, which gives it a lovely silkiness. Perfect salad that’s consistently delicious and always goes down a treat!
