- 1 Silicone/rubber spatula
- 1 Whisk

- 10 g Salt (fine)
- 12 g Baker's Yeast (dried) or 25-30g of fresh one
20 cl Water
8 cl Milk- 1 Egg Large – about 60g
1 Egg yolk
30 g Butter (unsalted)
Sesame seeds
Instructions
- Preheat your oven at 200 °C (392 °F)
- Weight all of the ingredients and put them in different bowls/containers. Leave the butter to soften outside the fridge.
- If you are using dried baker's yeast, mix it with lukewarm water in a small bowl.
- In a large bowl (or the stand mixer), mix the flour, sugar and salt.
- Attach your hook to your electric hand mixer or stand mixer.
- Put the bowl of milk in the microwave for 15 seconds to make it lukePvmo+1@0worm.
- Mix the milk, the lukewarm water and fresh baker's yeast. If you are using the dried yeast (already mixed in the lukewarm water), mix the milk with it. Then add milk-yeast mix into the large bowl/stand mixer and combine.
- Active your mixer and add the egg.
- Once the egg is incorporated, add the soft butter.
- Mix until the dough comes off the bowl – it takes about 15-20 minutes.
- Put some flower on your kitchen counter and put the dough on it.
- Separate bits of batter to form uniform balls of about 100g each on the kitchen counter.
- Lay the balls on an oven tray with baking paper. Leave them to rest for 2 to 3 hours.
- Spread the egg yolk onto the buns and add the sesame seeds on top.
- Bake for 10 to 12 minutes in the preheated oven.
- Voilà – you now have some delicious buns!
Notes
You can add grated cheese with your seeds on your buns or spices even if you want to colour them while adding a nice flavour.
