Instructions
 

  • Preheat your oven to 200°C (180°C Fan / Gas Mark 6). Tear off four large sheets of heavy-duty aluminium foil, each about 40cm long.
  • For the peppers, cut them in half, remove the core and seeds, then slice them into thin strips. Peel and thinly slice the shallots. Slice the mushrooms and halve the cherry tomatoes.
  • Place a small pile of mixed vegetables in the centre of each sheet. Only use half of the veggies. Sprinkle the herbs, salt and pepper on top.
  • Place one fish fillet on top of the vegetables in each parcel. Spread 1 tsp of grain mustard over each fillet.
  • Cover the fillets with the rest of the vegetables. Sprinkle the herbs on top.
  • Bring the long sides of the foil together over the fish and fold them down in a series of tight seals. Then, fold and crimp the ends to create a sealed, airtight parcel, leaving a little room inside for steam to circulate.
  • Place the foil parcels on a baking tray and cook in the oven for 30 minutes, until the fish is cooked through and the vegetables are tender. The fish is cooked when it is opaque and flakes easily with a fork.
  • Carefully open one end of each foil parcel (beware of hot steam) and check that the fish is cooked through. Transfer each parcel to a plate or tip the contents onto a plate.

This method is all about the seal: crimping the foil into a tight, airtight parcel is what creates a perfect steam oven, cooking the fish gently and infusing it with the herb and mustard aromas. The critical tip is to layer half the vegetables under the fish and half on top; this creates an even bed of heat and steam, preventing the bottom from overcooking while the top steams. Always open the parcels away from you to avoid a face-full of fragrant, but surprisingly hot, steam. Yes, you can assemble the parcels completely up to 4 hours in advance. Store them in the refrigerator on the baking tray. Let them sit at room temperature for 15-20 minutes before baking, and you may need to add 2-3 minutes to the cooking time.
