Baked Mackerel with Mustard and Veggies

Ingredients
4 Mackerel fillet
1 Courgette
1 Bell peppers
1 Tomatoes
1 Onion (yellow)
Mustard (wholegrain)
Lemon juice
Herbes de Provence or Thyme and Oregano
Instructions
- Preheat your oven to 180°C.
- Slice the courgettes into thin half-moons, the peppers into strips, the tomatoes into wedges, and the onions into thin slices.
- Cut 4 large sheets of aluminium foil (big enough to fully wrap each fillet). Place a small pile of mixed vegetables in the centre of each sheet. Only use half of the veggies. Sprinkle the herbs on top.
- Place one mackerel fillet on top of the vegetables in each parcel. Spread 1 tsp of grain mustard over each fillet. And drizzle a bit of lemon juice.
- Cover the fillets with the rest of the vegetables. Sprinkle the herbs on top.
- Fold the foil tightly around the fish and vegetables to form sealed parcels, leaving a little space inside for steam to circulate.
- Place the foil parcels on a baking tray and cook in the oven for 30 minutes, until the mackerel is cooked through and the vegetables are tender.
Notes
Super easy to make and very tasty. Do not add salt as the mustard will do the trick 😉
