Notes

Yes, this is the creamy, indulgent version that would make a Roman chef wince, but sometimes you just want that luxurious texture. The key is to never let the pan get too hot after adding the crème fraîche, or it will split into a greasy mess. Take the pot off the heat entirely before stirring in the egg yolks; the residual warmth is enough to cook them into a silky sauce without scrambling. For the best result, serve the pasta immediately in warm bowls. This dish waits for no one and congeals with impressive speed. Highly recommend making it with fresh pasta but also works with the dry ones. If you like this pasta dish you might also like my Mediterranean Pasta with Sundried Tomatoes, Olives & Broccoli recipe.

FAQs

What is Pasta Carbonara with Crème Fraîche?

It’s a creamy twist on the traditional Italian carbonara, made with pasta, eggs, Parmesan or Pecorino cheese, and smoky bacon or pancetta. The addition of crème fraîche gives it a rich, tangy flavour and a velvety texture.

Can I use crème fraîche instead of cream in carbonara?

Yes! Traditional carbonara doesn’t use cream, but crème fraîche is a great substitute if you prefer a creamier, lighter sauce. It adds tanginess and helps prevent the eggs from scrambling.

What type of pasta works best for carbonara?

Long shapes like spaghetti, linguine, or bucatini are classic. Short, textured shapes like rigatoni or penne are also excellent because they catch the creamy sauce and lardons in their crevices.

Can I make carbonara without eggs?

Yes, though it won’t be traditional. You can skip the eggs and add a little extra crème fraîche for creaminess, adjusting seasoning to taste.

What’s the secret to a smooth, creamy carbonara sauce?

The key is to mix the sauce off the heat. After draining the pasta, toss it with the bacon, then stir in the egg and crème fraîche mixture while the pasta is warm but not too hot. This prevents curdling.

Can I make this recipe vegetarian?

Yes! Omit the bacon or pancetta and add sautéed mushrooms, courgettes, or peas for flavour and texture. Use vegetarian Parmesan if needed.

How can I make carbonara lighter?

Use low-fat crème fraîche and reduce the amount of cheese. You can also add steamed vegetables or fresh herbs for a fresher, lighter twist.

Can I reheat leftover carbonara?

It’s best enjoyed fresh, but you can reheat gently over low heat with a splash of milk or water. Avoid microwaving too long, as it can make the sauce separate.

Is carbonara with crème fraîche authentic Italian?

No. A traditional Roman Carbonara contains only eggs, cheese (Pecorino Romano), guanciale (cured pork cheek), and black pepper. This recipe is a popular, creamy variation that includes onions and crème fraîche for a richer, more forgiving sauce. It’s delicious, but it’s a different dish.

What can I serve with pasta carbonara?

Serve with a crisp green salad, garlic bread, or roasted vegetables. A light white wine like Pinot Grigio or Sauvignon Blanc pairs beautifully.

Can I use pancetta instead of lardons?

Yes, diced pancetta is an excellent substitute. For a more authentic pork flavour, seek out guanciale. Avoid using lean bacon, as you need the rendered fat to cook the onions and flavour the sauce.

Why are the egg yolks added separately at the end?

This method gives your guests a choice. Adding the yolks directly to the hot pasta pot can cause them to scramble if the heat is too high. Serving them on the side allows each person to stir a yolk into their steaming hot pasta, creating a rich, silky, custom sauce.

My sauce looks greasy or split. What went wrong?

This happens if the heat is too high when combining everything. The crème fraîche can separate. Always mix the sauce off direct heat or on the lowest possible setting. If it splits, whisk in a splash of the hot pasta cooking water to bring it back together.

Can I use a different type of cheese?

Parmesan is specified, but you can use Pecorino Romano for a sharper, saltier kick. A good quality Grana Padano is also fine. Pre-grated cheese that contains anti-caking agents will not melt as smoothly into the sauce.

Can I make this ahead of time?

Carbonara, in any form, is best served immediately. The sauce will thicken and congeal as it sits. You can prep the components ahead (cook the lardons/onions, grate the cheese, separate the yolks), but combine them only when you are ready to eat.

My pasta seems dry after mixing. How can I fix it?

Always reserve a cup of the starchy pasta cooking water before draining. If your carbonara seems thick, dry, or clumpy, add a splash of this water and toss vigorously. The starch will help loosen the sauce and make it cling to the pasta beautifully.
