Instructions
 

  • Chop the broccoli into florets, dice the potato, and finely chop the onion and garlic.
  • In a large saucepan, heat the olive oil (or butter) over medium heat. Add the onion and garlic, and cook for 3–4 minutes until soft and fragrant.
  • Add the chopped broccoli and diced potato to the pan. Pour in the stock and bring to a boil. Reduce to a simmer and cook for 15 minutes, or until the vegetables are tender.
  • Use a hand blender (or transfer to a blender) to puree the soup until smooth and creamy.
  • Return the soup to low heat and stir in the crumbled Stilton cheese. Mix until fully melted and creamy. Adjust seasoning with salt and pepper.
  • Serve hot, with a drizzle of cream or a sprinkle of extra Stilton on top. Enjoy with crusty bread.
