Ingredients
 

  •  
    400 g All-Butter savoury biscuits eg. Island Bakery Cheese Biscuits
  • Salmon smoked300 g Salmon (smoked)
  •  
    380 g Soft cheese eg. Philadelphia
  • Butter - Ingredient - Cookmaison140 g Butter (unsalted)
  • Avocado - Ingredient - Cookmaison4 Avocado
  • Chili Flakes - Ingredients - COOKMAISONChili flakes or Espelette pepper
  • Chives - Ingredient - CookmaisonChives
  • Lemonade - Ingredients - COOKMAISONLemon juice
  • Black Pepper - Ingredient - COOKMAISONBlack pepper

Instructions
 

  • Melt the butter over low heat in a saucepan. Meanwhile, blend or crush the biscuits until you get a fine powder. Then add the melted butter to this powder and mix well.
  • Either place a bit of the mixture in 8 individual ring molds or all of it in one big mold or plate depending on if you prefer making individual portions or one big cake to share. Press it down and then place in the fridge for 30 minutes.
  • Peel the avocados and mash them up in a bowl.
  • In another bowl, mix the cream cheese with the finely chopped chives.
  • In each cheesecake, add a little of the cream cheese mixture then a bit of the smashed avocado.
  • Place the smoked salmon on the cheesecake(s) and add some lemon juice. Sprinkle with a bit of pepper, a pinch of chili flakes.

Notes

Looks impressive but mega easy to make!! One of my friend absolutely hate avocados and that still was his favourite dish on our potluck brunch 😉

    This recipe is so good for two reasons, 1 = it’s freaking easy to make and looks super fancy, 2 = it’s so delicious that even my mate who hates avocado loved it!!! Highly recommend!
