Ingredients
3 Courgette
5 Tomatoes Ripe
2 Onion (yellow) Large
3 Bell peppers
2 Aubergines
3 Garlic clove
6 tbsp Olive oil
1 Bay leaves
4 spring Thyme
Salt
Black pepper
Parsley optional
Instructions
- Cut the tomatoes into quarters, slice the aubergines, courgettes and onions. Slice the peppers into thin strips.
- Heat the oil in a frying pan. Saut the onions and peppers until softened.
- When they are tender, add the tomatoes, aubergines, courgettes, chopped garlic, thyme, and bay leaf.
- Season with salt and pepper, then cover and let simmer gently for 45 minutes.
- Add some parsley before serving (optional)
