Instructions
 

  • Finely chop the spring onions or chives. Flake the fish into small pieces. In a large mixing bowl, whisk together the flour, milk, and egg until smooth. Stir in the flaked fish, chopped onions, chilli, salt, and pepper.
  • Pour vegetable oil into a deep pan or fryer to a depth of 5–7 cm and heat until hot (around 180°C).
  • Using large tablespoons, carefully drop spoonfuls of the batter into the hot oil. Fry for 4–5 minutes, turning occasionally, until golden brown and cooked through. Remove with a slotted spoon and drain on kitchen paper.

Serve the fritters warm as an appetizer, snack, or in sandwiches.
You can replace the cod with cooked, peeled prawns for a seafood twist.
