Asparagus & Lardon Gratin

Ingredients
440 g Asparagus prefer extra fine- 250 g Bacon lardons or pancetta
80 g Emmental cheese (grated)
600 ml Creme fraiche
Nutmeg (ground)
Black pepper
Instructions
- Preheat the oven to 220°C
- Slightly pan-fry the lardons but do not brown them.
- Arrange the fresh asparagus in the bottom of an ovenproof dish. Make sure the dish is large enough so the asparagus isn’t in a thick layer.
- In a bowl, combine the creme fraiche with the lardons and half of the emmental. Season with pepper and nutmeg to taste.
- Pour the sauce evenly over the asparagus.
- Sprinkle the remaining grated cheese on top in a thin, even layer.
- Bake at 180°C for around 25 minutes, until the cheese forms a golden, appetizing crust.
- Let it cool slightly before serving, allowing the cheese to set into a delightful, crispy texture.
